Easy College Meals: Black Bean & Corn Quesadillas
With college comes with a lack of income which can lead to unhealthy food choices. You tend to get more for your money if you buy the sugar-filled and fat-filled options from the store. The goal of my Easy College Meals recipes is to provide meals that are cheap and easy to make! And, most importantly, they’re healthy! Well, healthier than the store-bought options.
In this post, I’m going to show you how to make one of my favorites, black bean and corn quesadillas. Canned beans and canned corn are relatively inexpensive, and you’ll have tortillas let over to make even more quesadillas or other healthy snacks!This recipe is pretty self-explanatory, but why not show you pictures anyways!
The ingredients you’re going to need are:
- Black beans, 1 can
- Corn, 1 can
- Diced green chilies
- Shredded cheese
- Tortillas
Combine beans, corn, and chilies in a bowl or container. Now, I opted for canned corn because I didn’t have any room in my freezer to keep frozen corn. Feel free to use frozen corn if you want! I also opted for whole wheat tortillas because I’m always trying to make things a little bit healthier.
Place tortilla in heated pan with a bit of oil to make the outside a bit crispy. Then, add bean, corn, and green chili mixture to the tortilla and top if off with cheese.
Fold over tortilla to seal in the bean mixture and the cheese. Like I said before, quesadillas are very easy to make and pretty self-explanatory. I cooked mine until the cheese was melted and the outside of the tortilla is crispy.
