Turkey & Feta Pita
Happy Friday! Man has this been a long week. I’ve been falling behind on blogging and am totally hoping to catch back up over the weekend. I asked on Twitter yesterday about which recipe you’d like to see on the blog, and the majority voted for my turkey & feta pita! I’m actually really stoked to share this with you all because not only is it delicious, it’s actually very healthy and low-calorie!
The sweetness of the lettuce, smokiness of the turkey, and saltiness of the feta all mesh so well that I could honestly eat this all day. This is going to sound sad, but I live for my lunch break at work just because I get to eat this! I always like to plan ahead so I’ll typically make this the night before I go to work, stick it in the fridge, and grab it and go in the mornings!
INGREDIENTS:
- 1/2 of a pita (I used multigrain just to get some extra nutrients)
- 1 leaf of lettuce
- 1 serving of sliced turkey
- feta, crumbled
- mustard (optional)
STEP 1: Open pita and add turkey slices. Then add mustard.
I like to put the mustard in between the turkey slices to keep it from seeping into the pita and making it soggy.
STEP 2: Add fresh-cut lettuce.
You can either cut up your lettuce or just fold the leaf in half and slide it in. Either way works! We just had left-over cut lettuce from our dinner so I just used that.
STEP 3: Add crumbled feta. Make sure to get the feta in between the lettuce and turkey. You don’t want all of the feta just sitting on top. Get that feta flavor throughout!
TA-DA! This is a super simple, delicious lunch idea that I eat on the regular. Of course you can really do anything you want with the pita, but I just love all of these flavors in one sandwich!
