Scrambled Tofu & Veggies
Ho, ho, ho Thanksgiving is over!
I’m really sad that Thanksgiving is in the past because it’s honestly one of my favorite holidays. The food, the drinks, the family… ugh so good.
But I’m excited that Thanksgiving is over because that means I can jump back on my healthy eating train. Don’t get me wrong, I love the rolls, stuffing, green beans, mashed potatoes… all of it. But by the time my 4 Thanksgivings are over, it feels like I’m one giant balloon of salt and sugar.
This recipe is my go-to favorite for when I’m craving salt and really just any kind of Chinese or Thai food. I eat this probably once or twice a week on average… because it’s THAT good.
And I posted a photo of this meal on Instagram a few weeks back, and several people commented about wanting to see more healthy recipes from me, so here ya go!
You can substitute in any kind of vegetables you want. Broccoli, carrots, spinach, onions, peppers… they’d all be delicious in this. I’m just really loving peppers and onions as of late so that’s what I’m including in mine today!
Ingredients:
- 1/2 block of tofu
- 1/2 bell pepper
- 1/2 onion
- soy sauce
- 1/2 cup cooked rice
STEP 1: Drain and crumble 1/2 block of tofu
Crumble tofu into pan over medium heat. Drizzle with olive oil or sesame oil and begin the browning process.
STEP 2: Dice 1/2 red bell pepper and 1/4 of an onion
I already had a red onion diced from a meal I made last week. Yellow or white onions will give a better flavor, but use whatever you have!
STEP 3: Brown tofu and add diced peppers and onions
First, brown the tofu and get it to the level of brownness that you prefer. Then add the peppers and onions and continue to sautè until the peppers and onions are tender.
STEP 4: Add in soy sauce for ~flavor~
I love soy sauce so I probably add too much… but when soy sauce caramelizes and combines with the tofu and veggies… OMG it’s heaven.
STEP 5: Add in 1/2 cup of rice, additional soy sauce if needed, toss to coat, and serve
I top mine with sesame seeds for a little extra crunch and flavor.
Fun fact: I actually ate this for dinner tonight.
