4th of July Cupcakes

Surprise! Happy 4th of July! I am coming to you today with a fun post that I really wanted to do. I don’t know why, but this year I’ve been super into the whole red, white, and blue thing for the 4th. I usually don’t get that excited about the 4th of July, but there’s just something different about this year. Maybe it’s because I’m actually throwing a get together this year instead of sitting around hoping someone will invite me to do something.

Anyways, in order to fulfill my need for red, white, and blue in my life, I decided to whip up a delicious batch of 4th of July cupcakes! Perfect for a 4th of July barbecue or just a fun night in, these cupcakes are delicious. Well should I say the batter and the icing were delicious. I’ve yet to actually try one… I’m saving that for the party tonight.

In the midst of making this recipe, I realized we didn’t have any sour cream. But don’t worry, I substituted some greek yogurt and it still tasted amazing.

Usually I’m all for making things from scratch, but I just wasn’t feeling it when it came to making the icing. I found this powdered frosting mix at Target (imagine that) and decided to try it. It actually tasted just like homemade and was a really nice consistency.

The cupcakes turned out amazing, and a big thanks goes to my friend for helping me decorate them! For the tiny, blue cupcakes, we thought it would be fitting to pipe out some stars and sprinkle them on top!

Taking some time outside of CrossFit to drill down and focus on my weightlifting technique. Snatches and cleans have always been a little intimidating and I’ve been scared to push myself on them for fear of injury. Looking forward to seeing how my lifts progress over the next few months!

I was 9 months in to my fitness journey, tracked macros like it was my job, and religiously went to the gym 5-6 days a week. Seeing this pop up in my “Memories” was just what I needed today because being stuck at home because of my susceptibility to lung problems and #covid_19 has left me highly unmotivated to workout...
I honestly forgot how productive I am whenever I w I honestly forgot how productive I am whenever I work from a coffee shop ☕️ No pantry full of food, no comfy bed, and no opportunity to take a nap. Working from home is great and all, but it can be so distracting 😂
